What I Am Eating & An Update

Happy Thursday wonderful people 🙂 I hope those of you on the east coast enjoyed those few days of living in a snow globe. Bobby and I were stuck in the house all day Friday watching the snow quickly cover everything in sight. We ventured out later in the day, trekking through snow up to our knees! Bobby posted some pictures and videos of our trip out in the snow on his Instagram. We were surprisingly rescued Saturday by our friends who let us join them at the gym and then we spent the afternoon at their house watching college basketball. All in all, we had a great few days off and enjoyed spending quality time with each other, which we realized was very overdue. On to the point of this post…an UPDATE! That’s right, I’m here and I’m showing you guys another update of my prep. High five for consistency!!  

So there ya have it. Just about as transparent and vulnerable as it gets. But I want to be real with my readers. I want you to know that I am a work in progress. I want my transparency to encourage and empower women who are struggling to find the discipline and willpower to achieve any and every kind of goal. On a lighter note, I thought I’d share some photos of some of my typical meals throughout the day.  

One recipe I want to share with you all is for egg white oatmeal. I know, it sounds a little weird, if not gross. But I promise you, they are delicious!!

Egg White Oatmeal
Serves 1
Fluffy, protein-packed oatmeal that will start your morning off on the right foot

Ingredients
  1. 1/3 cup old fashion oats
  2. 1 cup egg whites
Toppings/Add-ins
  1. Cinnamon
  2. Stevia
  3. Peanut Butter
  4. Fruit
Instructions
  1. In a microwave-safe bowl, cover oats with just enough water to saturate them completely.
  2. Microwave for 30 seconds.
  3. Pour in egg whites and stir until mixed.
  4. Microwave for 1:15-1:30 minutes.
  5. Stir well and microwave again for 20-30 seconds longer.
  6. Add in any topping or add-ins & enjoy!

I crave these first thing every morning! Lately I have been just adding cinnamon and stevia and topping with 1/2 cup blueberries. YUMM!
